Lentinus edodes (shiitake) is a famous traditional Chinese mushroom, in the world it is the earliest mushroom which was cultivated by human being. Lentinus edodes (shiitake) has many nutritional elements and tastes good, so that it is named as king mushroom Lentinus edodes (shiitake) is rich in nutrition. Those dried Lentinus edodes (shiitake) contain 18.64% protein, 4.8% fat, 71% carbohydrate, ore than 10 kinds of amino acids, including 7 kinds of essential amino acids. It also contains VD, VB1, VB2, VPP , mineral contents and crude fibre etc.
The carbohydrate in the shiitake mainly includes mannitolum, trechalose, mycose, glucose, fondaparinum etc.

Lentinus edodes is very effective in restraining cancer cells and can restrain 97.5% sarcoma 180 of small rats and 80% A cancer. Lentinus edodes contains double ribose nucleic acid which can help to produce antiferon.
